Maine's Wild Blueberry & Rhubarb Jam

This is a new favorite among the folks in Downeast, Maine. Succulent Maine Wild Blueberries together with fresh local Rhubarb are simmered with just the right amount of sugar and pectin to produce a delicious jam; not too sweet and mildly tart. Like all of Bar Harbor's jams this one is made by hand in small batches with no preservatives added. The earliest records of rhubarb date back to 2700 BC in China where Rhubarb was cultivated for medicinal purposes. Marco Polo knew all about the Chinese rhubarb rhizome & talked about it at length in the accounts of his travels in China. Early records of rhubarb in America identify an unnamed Maine gardener as having obtained seed or root stock from Europe in the period between 1790-1800. Rhubarb is a good source of Potassium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Calcium, Magnesium and Manganese. The Wild Blueberry holds a special place in Maine's history — one that goes back centuries, to Maine's Native Americans. Maine's Wild Blueberries grow naturally in fields and barrens that stretch from Downeast to the state's southwest corner. Some of the most powerful antioxidants are highly concentrated in the deep-blue pigments of Wild Blueberries. What's more, Wild Blueberries contain more antioxidants than their cultivated cousins. The Bar Harbor Jam Company was started in 1989 as a winter project at the Cottage Street bakery in Bar Harbor, Maine.  Since then the company has become famous for the way it’s been crafting its Maine Wild Blueberry Jam.  Today, the company's kitchen is located on beautiful Mount Desert Island, Home of Acadia National Park & near the center of wild blueberry barrens.
